I was in a frazzle at work yesterday because I found out the party I was going to that night was a potluck. What can I make in 15 minutes that is cheap, healthy, and quick? Coleslaw.
I was debating on getting a whole cabbage and shredding it along with the carrots but when I got to the grocery store I noticed a bag of coleslaw mix is $1.99 or the cabbage is $1.69. Really how much hassle will that 30 cents save me – ALOT! I checked out the coleslaw dressing and it was $2.59 with loads of sodium and lists of additives. I think this is something I can whip up quick and easy.
The dressing was inspired by ifood.tv but the rest was kind of a big bag of adding my own flair (and veggies I already had in the fridge)
- 1 package of coleslaw mix (red/green cabbage and carrot)
- 1 green onion (diced)
- 1/2 head of broccoli (chopped small)
- 1/4 cup low fat mayo
- 1 tbsp vinegar
- 2 tsp sugar
- 1/2 tsp salt
- 1 tsp celery salt
- dash of lemon juice
- Combine veggies in one bowl and mix dressing (mayo, vinegar, sugar, salt, celery salt)
- When coleslaw is mixed, add a dash of lemon juice.
