Rustic Vegetable Soup with Quinoa

This soup contains great protein for body building, medicinal properties of mushrooms, vitamin A which is great for young looking skin, and immune booster power of onions and garlic.
  • 2 onions diced
  • 4 carrots chopped
  • 2 celery stalks chopped
  • 1/2 cup leeks chopped
  • 2 zucchini chopped
  • 2 cups mushrooms
  • 1 tbsp minced garlic
  • 1/4 cup quinoa
  • 4 cups vegetable stock
  • Salt/pepper
  1. Sauté onions and garlic until browned. Soak quinoa in water for 3-4 minutes and rinse. Add remaining ingredients to the pot. Boil and summer for 30 minute until all vegetables are soft.
